Ingredients

  • 4 cup all-purpose flour

  • 1 package active dry yeast

  • 1 cup milk

  • ⅓ cup honey

If you're mixing by hand, like I do, use a fork for the same amount of time, 3 minutes and 30 seconds, mix as fast as your little wings will let you. Using a wooden spoon, stir in as much of the remaining flour as you can.

  4. Turn dough onto a floured surface. Knead in enough remaining flour to make a moderately soft dough that is smooth and elastic (3 to 5 minutes total). Shape dough into a ball. Roll the ball around in the bowl with about 1/2 tablespoon of olive oil. Cover the dough loosely with plastic wrap. Cover the bowl with a damp dishtowel and place in a warm spot until the ball doubles in size (about 1 hour).

  5. Punch dough down. Turn onto a lightly floured surface. Divide in half. Cover and let rest 10 minutes. Lightly grease a baking pan just big enough to squeeze all your rolls into one pan. A 9-inch diameter pie pan is ideal. If there are more rolls left over, use a separate dish and squish them together as much as possible. (Keeping them touching shoulders snuggly will help achieve the perfect texture and moisture).

  6. Make the filling by adding 1/3 cup butter, 1 cup pitted medjool dates and 1 tablespoon of cinnamon to a blender. Use a puree setting or continue blending until the dates are reduced to tiny bit. The texture will be coarse, like a strudel topping.

  7. Roll each portion of the dough into a 12x8-inch rectangle. Sprinkle the date, butter and cinnamon mixture over the dough. Roll up into a spiral, starting from a long side. Slice each roll into 12 equal pieces. Place in prepared pans. Cover and let rise in a warm place until nearly double (about 30 minutes).

  8. Bake in 375 degree F oven for 20 to 25 minutes or until golden. Cool slightly; remove from pans. Drizzle with icing recipe of your choice. If desired, serve warm. Makes 24 rolls.
